That loaf reminds of a story my mom told me about her mom. My grandmother was proud of her cooking. But one day her bread came out kinda like that and she hurried to bury it in the yard so her husband would never see it. She just couldn’t bear for him to know about it. :D

Start with the 2nd recipe for the moment.

Watch the machine as it kneads. Is there enough water? Add a little water at a time until a smooth ball forms.

Check the machine often; many cheap machines have their baking cycle set too long.

Depending on your flour, the bread may or may not rise all the way to the top, but it should rise. There will always be two rises, with the machine punching down the loaf halfway through.

You may want to remove the loaf after the first rise and put it on a pan or a sheet in your regular oven. Bread machines that make normal shaped loaves are not inexpensive.
